The Bolgheri Rosso ‘Volpolo’ is really a pleasant surprise. Yes, because in this area of the Maremma it is difficult to establish the names of the historic labels, but Podere Sapaio, a winery founded at the end of the millennium, in 1999, is doing its utmost to become part of the elite of Bolgheri wines, thanks also to the work done by Carlo Ferrini, the internationally renowned oenologist who oversees production. This is a multi-award-winning label, with a harmonious character and good longevity, surprising for its elegance and ease of drinking. It deserves more than a taste. “Volpolo” originates from a blend with an international profile, in which Cabernet Sauvignon plays the starring role, in fact we find it in the final blend with 70%, accompanied by equal percentages of Merlot and Petit Verdot. After harvesting, which is strictly by hand, the bunches of grapes are taken in crates to the cellar’s winemaking rooms to be destemmed. The must obtained from pressing the grapes ferments at a controlled temperature in steel tanks, macerating for a long time on the skins. Maturation, which lasts a total of 14 months, takes place in both barriques and French tonneaux.

“A new interpreter of the Bolgheri territory. The Podere Sapaio farm was founded in 1999. Its 40 hectares are divided between the municipalities of Castagneto Carducci and Bibbona. They are located on Quaternary deposits and range from loose coarse sandy sediments to alluvial deposits with draining calcareous soils. The vines of Bordeaux origin that have become established in the area over the last fifty years are cultivated here: Cabernet Sauvignon, Cabernet Franc and Merlot. Other grape varieties are present in small quantities. Several hectares planted with olive trees, of the Frantoio, Moraiolo and Leccino varieties, are also part of the estate.” Source podesapaio.it
